Homemade Eskimo Ice Cream on a Stick

The simplest and fastest treat - even a child can make it! Homemade Eskimo ice cream on a stick is prepared in molds with just two ingredients and coated with real chocolate glaze. No ice cream maker needed - the mixture is whipped with a mixer.

Preparation
Step 1
For the ice cream itself, you only need two ingredients - heavy cream and condensed milk. To make it tasty and high quality, choose natural products without substitutes. The cream should be at least 30% fat, otherwise it won’t whip. Chill it well before starting.
Step 2
Pour the cold cream into a deep bowl. Start whipping with a mixer at low speed - while liquid, the cream will splatter. As it thickens, increase the speed. Whip until soft peaks form - the mixer whisks should leave visible trails. Don’t overbeat, otherwise it will turn grainy, separate into whey, and become butter.
Step 3
Continue whipping on the lowest speed, gradually pouring in cold condensed milk. Don’t beat too long - as soon as it’s incorporated, stop.
Step 4
Pour the mixture into special molds. Insert sticks. If you don’t have molds, use small cups. Place the ice cream in the freezer for about 4 hours until fully set.
Step 5
Prepare the glaze. Use quality chocolate with cocoa butter, without vegetable fats.
Step 6
Add butter to the chocolate. Melt in the microwave in short bursts of about 10 seconds, stirring each time until fully melted. Don’t overheat - short intervals are key. The glaze should be smooth and fluid.
Step 7
Take the frozen ice cream out of the molds. Pour the glaze over them - it will harden instantly because the ice cream is very cold. Place glazed ice cream on a rack, then return briefly to the freezer to let the glaze set completely.
Step 8
Serve the Eskimo ice cream at the table. Enjoy!
