Homemade Diet Mayonnaise

Low-calorie, made from common ingredients, perfect for the whole family! Homemade diet mayonnaise is based on sour cream, significantly lowering its calories. Mustard and lemon add flavor, and boiled eggs make it safe for kids and those on a diet.

Preparation
Step 1
Boil the eggs in advance and let them cool. You can use sour cream of any fat content, but remember that the higher the fat, the more calories in the sauce. Use tasty mustard (avoid overly spicy). I used olive oil, but any vegetable oil will do - choose according to your taste.
Step 2
Peel the hard-boiled eggs, cut them in half, and remove the yolks. You won’t need the egg whites for this recipe - save them for other dishes like salads. Place the yolks in a small bowl and mash them with a fork until finely crumbled.
Step 3
Squeeze a little lemon juice. Try to avoid getting seeds into the juice.
Step 4
Add lemon juice, mustard, and oil to the mashed yolks. Adjust the amount of lemon and mustard to your taste - you can increase or decrease them as you like. You can taste the finished mayonnaise and adjust the seasoning later.
Step 5
Mix the yolks thoroughly with the other ingredients, breaking up any lumps - the smoother the mixture, the more uniform the sauce will be.
Step 6
Add sour cream to the yolk base and mix until the sauce is smooth and silky. Add salt and pepper to taste.
Step 7
Lightly whisk the mayonnaise with a whisk. It should have the consistency of thick sour cream.

The sauce is ready - use it to dress salads or serve with other dishes. Enjoy!
