Preparation
Step 1
Prepare the ingredients. The final result will depend on their quality, so choose natural dairy products without vegetable-fat substitutes.
Step 2
Use a heavy-bottomed saucepan so the candy mixture heats evenly. For darker caramel-colored candies, pour 3½ oz of the sugar into the saucepan and place it over low heat. Melt the sugar until it turns into caramel. Do not stir it; gently shake the saucepan occasionally. Skip this step if you prefer pale candies.
Step 3
Once the sugar has completely melted and reached a caramel color, add the remaining sugar and pour in the milk. It is best to use warm milk, as cold milk may cause the caramel to harden temporarily. It will melt again as the mixture heats. Add the butter and sweetened condensed milk.
Step 4
Cook the milk mixture over low heat for 20–30 minutes, stirring constantly. Be careful, as the caramel will be extremely hot. A wooden spatula is preferable because some silicone utensils may not withstand the high temperature.
Step 5
The mixture will gradually reduce, thicken and darken. Once it becomes noticeably thick, it is ready.
Step 6
Remove the saucepan from the heat and let the mixture cool slightly. Beat it with an electric mixer until it thickens further. This may take approximately 5 minutes.
Step 7
Line an 8 × 8-inch pan with plastic wrap. Pour in the candy mixture and smooth the surface. Let it cool to room temperature, then refrigerate until firm enough to cut.
Step 8
If the caramel does not set firmly in the refrigerator, remove it and leave it uncovered at room temperature for up to 24 hours. Lift the firm slab from the pan and cut it into bite-sized candies.
Step 9
Serve the homemade creamy caramel candies with tea or coffee.
