Homemade Chicken Pelmeni
Very tasty, appetizing, made from simple ingredients, and perfect for dinner! Homemade chicken pelmeni made by hand are much better than store-bought ones because they contain only natural ingredients. Chicken filling is light and wholesome, so these dumplings are suitable for children as well.

How do you make homemade chicken pelmeni? Start by making the dough. How do you make the dough? Sift the flour into a deep bowl and add the salt. Sifting not only removes possible impurities from the flour, but also fills it with air, which makes the dough softer.

Next, pour in room-temperature water. This is important, because in warm water the gluten in the flour develops faster, and that is what gives the dough its elasticity. Knead the dough.

If the dough sticks slightly to your hands, add a little flour. Or, on the contrary, if the dough is still crumbly, pour in a little more water. Flour varies, so the amount of water can differ too. Judge by the texture of the dough. It should become uniform, smooth, and elastic. Wrap the pelmeni dough in plastic wrap and let it rest for 20-30 minutes.

Meanwhile, prepare the filling. How do you make the filling? I used chicken fillet for the filling, but if you are short on time, you can use store-bought ground chicken. Pass the chicken fillet through a meat grinder or chop it in a blender. Peel the onion, also pass it through a meat grinder or blender, add it to the ground meat, then add salt and pepper. If you like, you can add 1-2 garlic cloves to the filling. Mix well. The filling is ready.
Step 6
Roll out the rested dough with a rolling pin into a thin sheet. Using a glass, cut circles out of the dough. Knead the leftover dough again and roll it out once more.

Place 1 teaspoon of filling onto each circle.

Fold the piece in half and seal the edges well.

Curve the resulting half-moon and pinch the corners together. Shape the rest of the pelmeni the same way. Place the finished chicken pelmeni on a floured surface. At this stage, the pelmeni can be frozen.
Step 10
Cook the pelmeni in a large amount of water. Bring the water to a boil, add salt, and if you like, add a bay leaf. Carefully lower the pelmeni into the boiling water. I recommend adding them one by one and stirring constantly so they do not stick together. Cook the homemade chicken pelmeni for about 10-15 minutes from the moment the water returns to a boil. Then carefully remove them with a slotted spoon. Serve with broth or sauces. Enjoy your meal!
