Homemade Butter
Just two ingredients for a perfect result. Making butter at home is not that difficult, as long as you keep a few details in mind. With only two ingredients, you will get a natural and delicious product. Give it a try - it will work out.

Step 1
Prepare the necessary ingredients. It is best to buy natural cream, preferably farm-style, with very high fat content, at least 33%.
Step 2
Before you start, chill the heavy cream well. Pour it into the bowl in which you will whip it. It is better to use a bowl with high sides so the splashes do not fly out while whipping. Put the bowl with the cream into the refrigerator. The mixer beaters, both the regular whisk attachment and the dough hooks, are also best chilled in the refrigerator, as this will speed up the whipping process. Put the water into the refrigerator too; it should be ice cold.
Step 3
Start whipping the chilled cream with a mixer on the highest speed, using the regular whisk attachment. When the cream begins to thicken, gradually lower the speed. The cream should begin to gather into little clumps.
Step 4
Depending on the quality and fat content of the cream, after about 10-15 minutes of whipping, a white liquid will begin to separate - this is buttermilk. It will look similar to whey. Replace the regular whisk attachment with the spiral dough hooks and continue whipping the cream for another 5-10 minutes.
Step 5
Using a wooden spatula, try to gather all the butter pieces into one lump. Pour the buttermilk into a separate jar. It is not needed for making the butter itself, but it can be used for pancakes, bread, dumplings, and other dishes.
Step 6
Pour in ice-cold water equal to about one quarter of the butter mass and whip it for about 5 minutes, using the dough hook attachment. Drain the water and repeat this process 3 more times. This helps remove any remaining buttermilk from the butter.
Step 7
After draining the water for the last time, knead the butter thoroughly with a wooden spatula. It should come together into one mass and become smooth and uniform.
Step 8
Line a rectangular container with plastic wrap and place the butter into it. Press it down, smooth it out, and shape it. Cover the container with a lid and put the butter into the freezer for 1 hour. After an hour, the homemade butter will be ready.
Step 9
Use natural butter for sandwiches, for spreading on pancakes and other baked goods, and also as an ingredient in recipes. Enjoy your meal!
