Homemade bread rolls

It is best to use strong white bread flour for this recipe.
Preparation
Step 1
In a large mixing bowl, combine the white flour, salt, and dried yeast using your fingers. Rub in the softened butter or lard until the mixture resembles fine breadcrumbs.
Step 2
In a separate jug, mix the warm milk with the water. Gradually pour the liquid into the flour mixture, using your hands to combine everything into a cohesive dough. Shape it into a ball.
Step 3
Transfer the dough to a floured surface and knead for 20-25 minutes, or until smooth and elastic. If the dough feels too stiff, add a touch more warm water to loosen it.
Step 4
Place the kneaded dough back into the bowl and cover it with a clean, damp tea towel or cling film. Leave it to rise in a warm place for 1-1½ hours, or until doubled in size.
Step 5
Once risen, turn the dough out onto a floured work surface and gently knock it back to release the air. Divide it into eight equal portions and shape each into a ball. Flatten each slightly with the palm of your hand and arrange them on a baking tray, placing them close together so they’ll rise and touch.
Step 6
Cover the tray with cling film and let the rolls prove again for about 1 hour, or until doubled in size.
Step 7
Preheat the oven to 220C. Once the rolls have risen, dust them lightly with rice flour and bake for 8-10 minutes, or until golden brown and fully baked through.
Step 8
Remove from the oven, separate the rolls, and serve warm.
