Homemade Berry Ice Cream

Fast, egg-free, made from simple, accessible ingredients! You only need 3 products for this homemade berry ice cream: berries, heavy cream, and powdered sugar. It takes just minutes to prepare, and thanks to natural ingredients, the flavor is unbeatable!

Preparation
Step 1
Use heavy cream with 33-35% fat content, suitable for whipping. You can use any kind of berries, fresh or frozen. I’m using fresh raspberries.
Step 2
Wash the raspberries and pat them dry. Place them in a sieve and press through to remove the seeds. Try to extract as much juice as possible. If using frozen berries, defrost them first and save the juice. Tip: pour hot water over the leftover pulp, add sugar to taste, and bring to a boil - you’ll get a tasty raspberry compote.
Step 3
Add powdered sugar to the raspberry juice and stir until fully dissolved. Alternatively, you can add the powdered sugar during the cream-whipping step.
Step 4
Whip the cream with a mixer until it becomes fluffy, airy, and smooth. Be careful not to over-whip, or it will separate into butter. Properly whipped cream should hold soft peaks and traces from the whisk should remain visible.
Step 5
Gradually add the raspberry purée to the whipped cream in portions, whipping each time until fully combined.
Step 6
The mixture will thin out and turn a beautiful soft pink color.
Step 7
Transfer the finished mixture into a container (or an ice cream maker, if you have one), and place it in the freezer for 4-5 hours until fully frozen.
Step 8
Scoop the finished berry ice cream into serving bowls. Garnish with berries and mint, and serve. Enjoy!
