Advice
Be prepared that you may need more or less flour than stated. Focus on the desired dough consistency, not the exact amount of flour.
Preparation
Step 1
Before buying yeast, read the instructions. Some are instant and mixed directly with flour. This recipe uses yeast that needs to be dissolved in liquid — in this case, milk.
Step 2
In a deep bowl, mix warm milk (heated to 98–104°F / 37–40°C), 2 tbsp of flour, sugar, and yeast. Leave in a warm place for 15 minutes. A foamy top should form — that means the yeast is active and you can proceed. If not, you’ll need different yeast.
Step 3
Add a room-temperature egg, melted butter, and salt to the mixture. Stir well. Wash the egg beforehand with food-safe cleaner to remove any dirt.
Step 4
Sift the remaining flour and knead a soft, smooth dough. Sifting adds oxygen, making the bread lighter and fluffier. You may need more or less flour — the dough will "tell" you. If it's still sticky and requires much more flour, avoid over-flouring to prevent dense bread.
Step 5
Cover the dough with a towel and let it rise in a warm place for 1 hour.
Step 6
Now prepare the filling. Melt and cool the butter. You can replace it with any vegetable oil if preferred.
Step 7
Cut the cheese into slices about ¼ inch (5 mm) thick. Any good-melting cheese without artificial additives will work.
Step 8
Wash, dry, and finely chop the dill and parsley. You can substitute or combine with other herbs like cilantro, wild garlic, green onion, or mixed herbs.
Step 9
In a bowl, mix the melted butter, chopped herbs, pressed garlic, salt, and pepper.
Step 10
Punch down the risen dough and shape it into a semi-round loaf. Transfer to a baking tray lined with parchment. Use a sharp knife to make deep crisscross cuts on the top.
Step 11
Spread the herb-garlic mixture over the bread. Insert cheese slices into the cuts. Bake in a preheated oven at 390°F (200°C) for 20–25 minutes. Time may vary depending on your oven and ingredients. Optionally, place a tray of water on the bottom rack — it makes the bread fluffier and helps it rise.
Step 12
Serve the freshly baked cheesy garlic bread immediately. Enjoy!
