Preparation
Step 1
To prepare the herring, place the water, lime juice, white wine, peppercorns, bay leaves, white wine vinegar, and salt into a saucepan and bring to a slow boil. Reduce to a gentle simmer, add the fish, and poach for approximately 12 minutes, or until fully cooked.
Step 2
For the potato salad, halve the cooked potatoes and transfer them to a large bowl.
Step 3
In a separate bowl, mix together the mayonnaise, dill, mustard, lemon juice, curry paste, salt, and freshly ground black pepper until well combined. Add this mixture to the potatoes and toss until evenly coated.
Step 4
Drain the poached fish and arrange it on top of the potato salad. Finish by garnishing with additional dill and lemon wedges before serving.
