Preparation
Step 1
You can use not only boiled beets but also oven-baked ones. Stores often sell pre-cooked beets in vacuum packs - they’ll save you time.
Step 2
Check herring fillets for small bones and cut into small cubes. You can use a whole salted herring (clean and fillet it first) or pre-cut fillets in oil. Ready-made fillets are more convenient and save time.
Step 3
Boil beets in their skins, then cool and peel. Grate on a coarse grater.
Step 4
Boil carrots in their skins, then cool and peel. Grate on a coarse grater.
Step 5
Boil potatoes in their skins, then cool and peel. Grate on a coarse grater.

Grate processed cheese on a fine grater. Since soft cheese sticks and grates poorly, freeze it for 20-30 minutes beforehand.

Hard-boil the eggs, cool, peel, and grate on a coarse grater.

Place a cooking ring (Ø 6 in / 16 cm) on a plate. First, layer the chopped herring and press it down. Do not add anything else - this layer is already juicy and rich.

Next, add grated potatoes and smooth them out. Top with mayonnaise. Using a piping bag makes it easier than with a spoon.

Add a layer of grated processed cheese, then drizzle with mayonnaise.

Next layer – grated eggs and mayonnaise.

Then – grated carrots and mayonnaise.

Finally, spread grated beets on top, cover with mayonnaise, and smooth with a spoon so the surface turns a nice pink-purple color. Refrigerate the salad for 1-2 hours to set.

Before serving, remove the cooking ring. Garnish with a beet rose and fresh herbs. Enjoy!
