Herring in Mustard Sauce

Preparation
Step 1
Use lightly salted, firm, and fatty herring. You can buy it or salt it yourself.
Step 2
The hardest step is cleaning the fish. Cut off the head, slit the belly, and remove the insides. Don’t throw away the roe or milt - they’re tasty too. Remove the top fin and tail. Peel off the skin, starting carefully at the tail. Trim off the lower belly with fins. Separate one fillet half and remove the backbone.

Scrape off any remaining black membrane from the belly. Remove the rib bones. Cut the fillets into pieces.
Step 4
Prepare the sauce: mix mustard, mayonnaise, 1 teaspoon of sugar, lemon juice, and ground black pepper. Use sweet mustard; if using spicy, add less.
Step 5
Peel the onion and slice into thin rings or half-rings. Put into a bowl, add vinegar, the remaining spoon of sugar, and knead the onion with your hands.
Step 6
Take a flat plate. Lay the marinated onion rings as the first layer.
Step 7
Place the sliced herring on top, including roe or milt if you saved them. Pour mustard sauce evenly over the fish, spreading it well. Refrigerate for at least 30 minutes.
