Herring and Egg Appetizer
Bold in flavor yet made from simple ingredients, this quick layered appetizer combines salted herring with a creamy egg and cheese topping. It looks festive and works well for parties or family gatherings.

Preparation
Step 1
Prepare the ingredients. Use salted herring fillets or a whole salted herring that you can fillet yourself. Hard-boil the eggs beforehand and leave them to cool.
Step 2
Place the eggs in cold water and bring to a gentle boil. Cook for 9 minutes after the water starts boiling, then transfer them to cold water and cool completely. Peel and cut into small cubes.
Step 3
Coarsely grate the cheese. Use a good-quality hard or semi-hard cheese. Processed cheese can also be used if preferred.
Step 4
Finely slice the green onions into thin rings. You can also add dill, which pairs especially well with herring.
Step 5
Combine the chopped eggs, green onions and grated cheese in a bowl. Season with salt and ground black pepper to taste, keeping in mind that the cheese, herring and mayonnaise already contain salt.
Step 6
Add the mayonnaise and mix the egg and cheese mixture thoroughly.
Step 7
If using a whole herring, fillet it and carefully remove all small bones. Pat the fillets dry if necessary and cut them into small cubes.
Step 8
Place a food ring on a serving plate. Add the chopped herring as the first layer and press it down gently.
Step 9
Spread the egg and cheese mixture over the herring and press it down evenly with a spoon. Refrigerate the appetizer for 1 hour to allow the flavors to meld.
Step 10
Carefully remove the food ring before serving. Decorate the top as desired and serve chilled.
