Hearty Pork Rib Soup with Rice

Preparation
Step 1
Prepare the ingredients. You can replace the pork with beef, chicken or turkey, but the cooking time and nutritional value will change. Adjust or add vegetables to taste. The rice can be replaced with vermicelli, noodles, millet, buckwheat or another grain, or omitted entirely.
Step 2
Rinse the pork ribs thoroughly and cut them into serving-sized pieces. You can replace the ribs with another bone-in or boneless cut of pork, such as shoulder, neck or ham.
Step 3
Scrub the potatoes under running water, peel and rinse them, then cut them into medium-sized cubes.
Step 4
Scrub the carrot under running water, peel and rinse it, then grate it coarsely. You can also cut it into slices or small pieces.
Step 5
Peel the onion and cut it into small cubes. If you prefer not to have pieces of onion in the soup, add a whole peeled onion while the pork cooks and discard it afterward, or omit it completely.
Step 6
Rinse and dry the parsley, then chop it finely. You can replace it or combine it with dill, green onions or other fresh herbs.
Step 7
Place the pork ribs in a large pot, cover them with cold water and bring to a boil over high heat. Skim off any foam, reduce the heat and simmer for approximately 50 minutes, or until the pork is tender.
Step 8
While the pork cooks, prepare the sautéed vegetables. Heat the vegetable oil in a frying pan over medium heat, add the onion and cook for 2–3 minutes until translucent. Add the carrot, tomato paste and seasonings, then cook for another 3–5 minutes, stirring occasionally.
Step 9
Add the potatoes and rinsed rice to the boiling broth. Bring the soup back to a boil and cook over medium heat for approximately 15 minutes.
Step 10
Add the sautéed vegetables to the soup and cook for another 5–7 minutes, or until all the vegetables and rice are tender. Season with salt and ground black pepper to taste, then turn off the heat.
Step 11
Stir the chopped parsley into the soup.
Step 12
Cover the pot with a lid and leave the soup to rest for approximately 10 minutes.
Step 13
Ladle the pork rib soup into bowls, garnish with fresh herbs and serve hot.
