Healthy Chicken Caesar Salad
Famous, but adapted for healthy eating! You can enjoy your favorite chicken Caesar even if you follow a “clean eating” plan - just swap the usual ingredients for lighter ones. The taste won’t suffer, and the benefits will only grow. Try it yourself!

How to make a Healthy Chicken Caesar: Prepare the ingredients. Chicken breast fillet is best as the leanest part. Mozzarella can be replaced with another soft cheese (Adyghe-style cheese, brined cheese) or a low-fat hard cheese (no more than 25% fat). Instead of cherry tomatoes, you can use one medium regular tomato. Boil the egg hard for 7-8 minutes. Cool the boiled egg in cold water.

Rinse the chicken fillet, pat dry, and lightly salt it. Wrap it in foil or a roasting bag. Bake in a preheated oven at 180°C / 356°F for 25 minutes. Let the cooked fillet cool. You can boil the chicken in salted boiling water, but baking it in foil makes it juicier and helps retain more beneficial properties.
Step 3
Rinse the lettuce leaves in cold water and dry well. Tear the leaves by hand and place on a plate. Don’t cut with a knife - contact with metal can cause oxidation, which may reduce the salad’s beneficial qualities.

Rinse and dry the tomatoes. Cut cherry tomatoes in halves or quarters. If using a large tomato, slice it into small wedges.

Remove the mozzarella from brine and pat dry. I used mini mozzarella balls; if the balls are large or you use another cheese, slice it. Add the cheese to the salad.

Peel the egg and cut it in half. Place one half in the center of the salad. You can also cut the egg into wedges.

Prepare the dressing.

In a small bowl, combine olive oil, mustard, and freshly squeezed lemon juice. Lightly salt and mix well.

Drizzle the salad with the dressing and serve immediately.
