Hawaiian Pizza with Pineapple and Chicken

Step 1
How do you make pineapple pizza? Prepare the ingredients for the dough. You may need a little more flour - this depends on flour quality, air humidity, and other conditions. Use filtered or bottled water; even though it goes into the dough, the quality should be good.
Step 2
Take a large bowl. Sift 150 g of flour into it. Sifting makes the dough softer because the flour is aerated.
Step 3
Add all the dry ingredients to the flour: sugar, salt, and dry yeast. Mix well with a fork.
Step 4
Warm the water until it’s warm but not hot - pleasantly warm, about 38°C (100°F). Pour the water into the flour, stirring with a fork. Add vegetable oil. Mix. The dough will still be very runny and sticky.
Step 5
Start adding the remaining flour little by little, mixing first with a fork and then with your hand. Don’t overdo it - too much flour makes the dough tough.
Step 6
Finish kneading on a floured board. The dough should become smooth while staying soft. I used a bit more than 200 g total. Shape into a ball, place in a bowl, cover with a towel or plastic wrap, and put in a warm, draft-free place for 1-1.5 hours to rise. I usually place it in a cold oven.
Step 7
While the dough rises, prepare the toppings. Pineapple can be rings or chunks - it doesn’t matter, you’ll cut it anyway. Boil the chicken fillet in any convenient way beforehand. Any tomato sauce will work. I used a simple Krasnodar-style tomato sauce. Choose a cheese that melts well.
Step 8
Cut the pineapple into small pieces.

Grate the cheese on a fine grater - this helps it melt faster and more evenly than coarse-grated cheese.
Step 10
By now, the dough should have doubled in volume.
Step 11
Turn the dough out onto a floured surface. Roll it into a thin sheet of any shape; I made a circle. The thickness should not exceed 4 mm. My base was about 28 cm (11 in) in diameter.
Step 12
Transfer the dough base to a baking tray lined with parchment. Spread tomato sauce over the dough.
Step 13
Tear the chicken fillet into small pieces with your hands and distribute evenly over the pizza. Add the pineapple.
Step 14
Sprinkle the pizza with the grated cheese.
Step 15
Bake in a preheated oven at 200°C (392°F) for about 20 minutes. Adjust to your oven. The cheese should melt and turn golden. Remove the pizza, slice, and serve immediately.
