Preparation
Step 1
To begin the pizza dough, place flour into a large mixing bowl (or into a stand mixer fitted with a dough hook). Add the yeast, sugar, and salt, then mix thoroughly. Create a well in the centre and pour in the olive oil along with 250ml/9fl oz tepid water. Combine, adding a touch more water if needed - the dough should be soft and slightly sticky. Knead until smooth and elastic.
Step 2
Form the dough into a ball and transfer it into a large oiled bowl. Cover with cling film and let it sit at room temperature for 45 minutes to 1 hour, or until it has doubled in size.
Step 3
While the dough rises, make the topping. Add the tomato sauce to a small saucepan with garlic granules, oregano, and chilli flakes. Season generously with salt and pepper, then stir. Bring to a boil, reduce the heat, and simmer for about 4 minutes, until the sauce thickens slightly. Taste and add a pinch of sugar if necessary. Remove from the heat and allow the sauce to cool.
Step 4
Preheat the oven to 220C, placing a pizza stone or large heavy baking tray inside to heat.
Step 5
Lightly flour your work surface, tip the dough out, and divide it in half. Shape each portion into a ball, dust with flour, and allow to rest for 5 minutes.
Step 6
Using floured hands or a rolling pin, stretch or roll one dough ball into a 25cm/10in circle, keeping the edge slightly thicker. Position it on a large sheet of baking paper. Spread half of the prepared passata over the base, leaving a 1-2cm/½-¾in border. Sprinkle with half the mozzarella, half the ham, and half the pineapple. Add green chilli if desired, and season with pepper.
Step 7
Carefully slide the pizza (on the baking paper) onto the preheated stone and bake for 10-12 minutes, until the crust is golden and the toppings are bubbling. Repeat the process with the second pizza while the first cooks.
