Hand-Whisked Mayonnaise (No Blender)
A thick, aromatic sauce made by hand! You can make mayonnaise without a blender - an ordinary hand whisk is enough. Even without gadgets it turns out stable and very tasty. The key is to follow a few rules.

How to make mayonnaise without a blender? Prepare the ingredients. You only need the egg yolk; use the white in other dishes. Mustard can be regular or Dijon - reduce the amount if it’s very hot. Use any neutral-flavored vegetable oil (olive or sunflower), but it must be odorless; otherwise the mayo can taste bitter. Instead of apple cider vinegar, you can use wine vinegar or lemon juice.
Step 2
To make mayo at home without an immersion blender or mixer, use a deep, narrow bowl - it’s much easier to whisk in. Don’t make a large batch at once; it’s hard to whisk. Put the egg yolk and mustard in the bowl, then pour in the vinegar. Season with salt and pepper to taste.

Whisk until smooth.
Step 4
Start adding the oil. Pour it in very small portions - literally a spoonful at a time - and whisk very well after each addition. Be patient; you need to whisk for a while. Don’t pour in a lot of oil at once, or the mayonnaise won’t emulsify.
Step 5
The sauce will gradually become lighter and thicker. You may need more or less oil than stated - go by the consistency. Once it reaches the thickness you want, stop whisking. I whisked for about 20 minutes and used a little less than 100 ml (about 7 tbsp) of oil.
Step 6
Serve this simple homemade mayonnaise as a dressing for other dishes. Enjoy!
