Hand Pies with Egg and Green Onion

Preparation
Step 1
Prepare the necessary ingredients for making fluffy hand pies in the oven.
Step 2
Pour 500 grams of sifted flour and 8 grams of dry yeast into a large bowl.
Step 3
Add 1/2 teaspoon of salt and 1 teaspoon of sugar to the bowl.
Step 4
Crack 1 chicken egg and add it to the bowl.
Step 5
Pour 300 milliliters of room-temperature kefir into the bowl and knead the dough thoroughly while mixing.

Add 2 tablespoons of vegetable oil to the bowl with the dough and continue kneading for another 2 minutes.

Grease the dough in the bowl with a small amount of vegetable oil, cover it with a cloth, and leave it in a warm place for 1 hour.

Chop 300 grams of green onion quite finely and place it in a deep bowl.

Add 1 teaspoon of salt to the bowl with the onion, then mash and crush it with a potato masher.

Add the finely chopped boiled chicken eggs to the bowl with the onion and mix well.

Add black pepper to the onion and egg mixture to taste.

Mix all the ingredients in the bowl thoroughly.

Sprinkle a little flour onto the work surface and place the dough on it, then knead it thoroughly.

Divide the dough into several equal parts and shape them into portion-sized balls.

Flatten each dough ball into a round, adding a little vegetable oil to the work surface.

Place the required amount of prepared filling onto each round.

Put a small piece of butter on top of the filling.

Seal well and shape the hand pies.

Place the hand pies on a baking sheet lightly dusted with flour and leave them to proof for 30 minutes.

After that, brush the hand pies with beaten egg and place the baking sheet into an oven preheated to 175 degrees Celsius (350°F).

After 20 minutes, turn off the oven and leave the baking sheet with the hand pies inside for 5 minutes. Then remove the baking sheet, place the hand pies on a serving dish, and serve them warm.
