Ham and pea pasta

Step 1
Bring a large saucepan of salted water to the boil. Add the pasta and cook for 9-11 minutes, depending on your preferred texture, adding the frozen peas for the final minute of cooking time.
Step 2
While the pasta cooks, melt a knob of butter or heat a splash of oil in a frying pan. Add the white parts of the spring onions and fry for one minute until just softened. Turn off the heat and leave to sit until the pasta is ready.
Step 3
Drain the pasta and peas, reserving a ladleful of cooking water, then transfer them to the frying pan. Add the cream, grated Parmesan, and chopped ham, along with 3 tablespoons of the reserved pasta water. Stir the mixture over low–medium heat until the cream begins to bubble, then lower the heat and continue stirring until the sauce coats the pasta. If the sauce becomes dry, stir in a little more pasta water.
Step 4
Add the lemon zest and the green parts of the spring onions, then season with salt, pepper, and lemon juice to taste. Serve immediately, topped with extra Parmesan.
