Ground Meat with Cheese in a Skillet

Tasty, homemade, and original - great for lunch or dinner. My kids call these ground meat patties with cheese “secret cutlets,” and they love them. I agree: what could be better than mom’s cutlets with gooey cheese inside? Try them, you’ll like them!

Preparation
Step 1
I use homemade pork/turkey ground meat with onion and garlic. If yours is plain, add a chopped onion and garlic clove. I use soft mozzarella, but you can choose processed or hard cheese. For mixing into the meat, you can use quick oats or white bread soaked in milk or cream.
Step 2
Place the ground meat in a deep bowl. Add quick oats (or soaked white bread) to keep the patties juicy and soft. Then add an egg, salt, and pepper to taste. You can also add your favorite spices.
Step 3
Crack the egg into the meat mixture, mixing evenly so there are no lumps and everything is well combined. If you have time, refrigerate the mixture for a few minutes - it’s easier to form patties from chilled meat.
Step 4
Cut your chosen cheese into rectangular slices. I always use mozzarella for these patties - it melts inside and stretches appetizingly. Remember, patties with cheese filling are best served hot; once cooled, the cheese will harden again.
Step 5
Wet your hands with cold water, take some meat, and shape it into a flat patty. Place a piece of cheese in the center and wrap the meat around it, sealing all sides. Shape into an oval, like a small pie. Repeat with all the meat and cheese. Make sure no cheese is showing - otherwise, it may leak out during frying.
Step 6
Coat each patty in breadcrumbs. A shallow bowl works well for this. If you don’t have breadcrumbs, use flour, semolina, or ground oats - or skip the coating altogether.
Step 7
Heat a skillet, add vegetable oil, and spread it evenly. Fry the patties over medium heat on both sides until golden brown.
Step 8
Serve the cheese-filled patties hot. They go well with pasta, rice, or potatoes. If they cool down, reheat before serving.
