Grilled Zucchini in a Pan without Oil

Lean, beautiful, and quick - a tasty snack! Grilled zucchini in a pan without oil is perfect for those watching calories and diet. Cooked this way, zucchini turns out just as delicious and juicy as when fried in oil, but much healthier.

Preparation
Step 1
I used regular zucchini with pale green skin. Young zucchinis also work well.
Step 2
Wash and pat dry the zucchini. Cut off both ends. Slice lengthwise into strips no thicker than 0.4 in (1 cm). You may use a vegetable peeler.
Step 3
Sprinkle the slices with dried herbs, salt, and pepper. Let them sit for 5-7 minutes to absorb the spices. Before grilling, blot with paper towels. Optionally, you may brush lightly with vegetable oil, but in this recipe zucchini is cooked without oil.
Step 4
Heat a grill pan well over medium heat. Lay the zucchini slices and grill for 1-2 minutes until grill marks appear. Do not move them around, or the pattern will blur.
Step 5
Flip the slices and grill the other side until seared. If you wish, you can also cook them in a regular pan.
Step 6
Transfer the ready zucchini to a plate. Serve as a hot or cold appetizer, or as a side dish to meat, poultry, or fish. Enjoy!
