Green Beans with Eggs

A quick, hearty, and healthy breakfast made from simple ingredients! Green beans with eggs cook very fast and are easy even for beginner cooks. Pre-boiled beans keep their bright green color thanks to a small trick.

Preparation
Step 1
If your green beans are frozen, there's no need to thaw them - they'll defrost during boiling. Peel the onion and garlic. Wash and dry the eggs.

Dice the onion into small cubes. Finely chop the garlic.

Bring water to a boil in a saucepan. Add salt, then add the green beans. Boil for 3-4 minutes, then drain the water.
Step 4
Immediately pour ice-cold water over the beans. You can even add ice cubes. This simple trick keeps the beans bright green. Once fully cooled, drain the beans using a sieve.
Step 5
Heat a skillet over medium heat and pour in some vegetable oil. Add the chopped onion and garlic to the oil. Sauté for a couple of minutes until soft, stirring occasionally.
Step 6
Add the green beans to the skillet and stir. Crack the eggs into a bowl. Beat them lightly with a fork to mix the yolks and whites. Pour the eggs into the skillet over the beans. Season with salt and pepper.
Step 7
Use a spatula to stir quickly so the eggs scramble into soft chunks. This type of scrambled egg cooks in just a couple of minutes.
Step 8
Serve the green beans with eggs immediately - right from the skillet if you like. Enjoy!
