Green Beans with Chicken in a Cauldron over an Open Fire

Preparation
Step 1
Prepare all the ingredients needed to cook green beans with chicken in a cauldron over a campfire. Cut the chicken into pieces. Peel the onion and garlic. Rinse the tomatoes, beans, and herbs under running water.

Light the fire and set the cauldron in place.
Step 3
When the cauldron is well heated, pour in vegetable oil and wait a few minutes until it gets hot. Cut one onion in half and toss it in to fry. Cook until a golden crust appears, then remove the onion with a slotted spoon.
Step 4
Add the chicken to the cauldron. Keep the fire at maximum at this stage - you need to brown the pieces until golden.
Step 5
Stir continuously and cook the chicken for 5-10 minutes. Then pour in boiling water so it covers the meat pieces halfway. Cover with a lid, reduce the heat to moderate, and cook for 30-50 minutes. The time depends on whether the chicken is home-raised or store-bought. The meat should become almost fully cooked. It took me about 50 minutes.
Step 6
Meanwhile, prep the green beans. If the beans are not young, trim the ends and remove the strings on both sides. Cut the pods into 2 or 3 pieces.
Step 7
After the time is up, check how much liquid is left in the cauldron. If there’s a lot, add more wood, increase the fire, and evaporate the excess juices while stirring with a slotted spoon. Add finely sliced onion.
Step 8
Cook for about 5 minutes - the onion should lightly fry.
Step 9
Next, add the chopped tomatoes and the beans.
Step 10
Gently mix everything, salt and pepper to taste, and season with your favorite spices.
Step 11
Cover the cauldron with a lid and keep it on a low fire until the beans are fully cooked. Cooking time depends on how young the beans are (it took me about 30 minutes). Open the lid occasionally; if the beans start to stick or burn, add just a little boiling water. If the tomatoes are juicy, they may be enough and you won’t need extra water.

Sprinkle the finished dish with finely chopped garlic and herbs. Ready to serve!
