Preparation
Step 1
How do you make green bean and egg salad? Prepare all the necessary ingredients. Use large eggs. It is best if the yolks are a rich yellow color, then the salad will look prettier. You can use either fresh or frozen green beans. I used frozen whole green beans, not cut. Choose any cheese you like, the main thing is that it should be good quality and tasty.
Step 2
Boil the eggs until hard-cooked, cool them, and peel them. Chop the eggs coarsely with a knife. If you want a softer salad texture, you can chop the eggs more finely or grate them on a coarse grater. I wanted the egg pieces to be more noticeable, so I cut them coarsely. You can choose whichever cut you prefer.
Step 3
Grate the cheese on a coarse grater.
Step 4
Boil the green beans until done in a large amount of salted boiling water. If the beans are fresh, 5 minutes will be enough; if frozen, 10 minutes. The main thing is not to overcook them: the pods should remain firm and keep their bright green color.
Step 5
Drain the cooked beans in a colander or sieve, let all the water run off, and cool them. If you wish, you can serve the salad warm. In that case, there is no need to cool the beans, just shake the sieve well several times to remove all the extra moisture.
Step 6
In a salad bowl, combine the green beans, eggs, cheese, and garlic pressed through a garlic press.
Step 7
Dress the salad with mayonnaise and mix. You can serve the salad immediately. Enjoy your meal!
