Greek-Style Stuffed Squid with Cheese, Pan-Fried

Preparation
Step 1
You can replace bell peppers with fresh or sun-dried tomatoes. The filling can be customized with other ingredients to your taste, like olives or capers.
Step 2
Clean the squid by removing the skin, inner films, chitin plate, and innards. Rinse well. If using frozen squid, thaw them slightly - it’s easier to clean them when slightly frozen. I use whole squid with tails, but pre-cleaned frozen tubes work as well. Just defrost those.
Step 3
Remove seeds and stems from the bell peppers, then finely dice them. For a more colorful dish, use peppers of different colors like red and yellow.
Step 4
Crumble the ricotta cheese by hand. You can substitute with mozzarella, feta, suluguni, cottage cheese, or cream cheese - whatever you prefer.
Step 5
Wash and dry dill and parsley, then finely chop them. You can also add or substitute other herbs like scallions, cilantro, or a mix of fresh herbs.
Step 6
In a bowl, combine ricotta, diced bell pepper, chopped herbs, garlic (pressed), salt, and black pepper. Mix everything thoroughly.
Step 7
Stuff the squid tubes tightly with the cheese and vegetable mixture. Secure the openings with toothpicks so the filling doesn't leak during frying. If you have leftover filling, you can use it for another squid, or stuff tomatoes or puff pastry and bake them.
Step 8
Heat vegetable oil in a skillet over medium heat. Place the stuffed squid in the pan and fry for about 1–2 minutes on each side until golden. Do not fry longer, or the squid will become rubbery.
Step 9
Transfer the cooked squid to a plate and serve hot, garnished with fresh herbs. Enjoy!
