Greek Salad with Croutons and Chicken

Preparation
Step 1
Wash and dry the vegetables well. Pay special attention to lettuce leaves and basil - excess moisture will ruin the dish. Use chilled chicken fillet for juicier meat. If frozen, thaw in advance.
Step 2
Rub the clean, dried fillet with salt and paprika. You can also add any spices to taste.

Wrap the fillet in foil, sealing edges tightly to prevent juice from leaking. Place the packet in a baking dish. Bake for 40 minutes at 180 °C / 355 °F. Remove from oven and cool completely. This method makes the fillet juicy and tender, but you can also use fried or boiled chicken.
Step 4
Cut bread into cubes, place in a skillet, and drizzle with olive oil. Fry over low heat until golden. Cool the croutons.

Slice cucumbers into half-rounds.

Cut tomatoes into wedges.
Step 7
Remove seeds from bell pepper and cut flesh into strips.

Peel onion and slice into half-rings.

Chop basil. You can substitute with any fresh or dried herbs. Cut cheese into cubes - traditionally feta or brined cheese is used. Choose quality cheese without vegetable fats.

Slice the chilled chicken fillet thinly.

In a salad bowl, combine cucumbers, tomatoes, pepper, onion, and basil. Season with salt and pepper, then add oil and lemon juice. Mix well.

Place salad leaves on a large flat plate. Layer the dressed vegetables on top.

Add sliced chicken, cubed cheese, and olives on top. Finish with croutons to keep them crispy.

Serve immediately - dressed vegetables will release juice over time. Enjoy!
