Grater Salad

Preparation
Step 1
All vegetables should be fresh and raw. Wash them and pat dry with paper towels. I used olive oil, but any refined vegetable oil will work.
Step 2
It’s best to use young cabbage for this salad, though mature cabbage will also do. Remove the tough outer leaves. Finely shred or chop the cabbage as thinly as possible - the thinner it is, the tastier your salad will be. Place the cabbage in a bowl and rub it with your hands to soften it and release juice.
Step 3
Peel the beet and grate it using a Korean-style grater or a regular coarse grater.
Step 4
Peel the carrot and grate it the same way - coarsely or using a Korean grater. Wash and dry dill, then finely chop it.
Step 5
In a large mixing bowl, combine all shredded vegetables. Add chopped dill or parsley, about 1 tablespoon of lemon juice, and drizzle with vegetable oil. Salt lightly if desired. You can also add finely chopped onion or green onion.
Step 6
Mix the salad well and serve freshly prepared. Enjoy your meal!
