Grape Leaves for Dolma for Winter

How do you prepare grape leaves for dolma for winter? You will need a minimal set of ingredients for this recipe. The main ingredient for this preserve is, of course, grape leaves.
Step 2
For this recipe, use young, juicy leaves.
Step 3
Prepare the salt, sugar, and vinegar for the marinade.
Step 4
Wash the jars and lids well, rinse them in clean water, and sterilize them in any convenient way. I usually sterilize them in the oven. To do this, I place the jars into a cold oven upside down, turn the oven on, set the temperature to 180°C (350°F), and keep them there for about 20 minutes.
Step 5
Cut off the stems from each grape leaf.

Wash the leaves themselves thoroughly in clean cold water, literally each leaf separately, to remove all dust, cobwebs, or dirt if there is any.
Step 7
Pour boiling water over the leaves and leave them for 5 minutes, then carefully drain the water.
Step 8
Stack 6-7 leaves on top of one another.
Step 9
Fold the leaves toward the center, first from one side.
Step 10
Then do the same from the other side.

After that, roll them up.

The finished bundle of leaves, ready for sealing, looks like a filled crepe. Do the same with the remaining leaves.

Pack the rolls tightly into the jar.
Step 14
Prepare the brine. How do you make the brine? Pour clean water into a saucepan, add the salt and sugar, place it over high heat, and wait until it comes to a boil. Then pour in the vinegar, stir, and immediately remove the marinade from the heat.

Pour the hot brine into the jars with the grape leaves, filling them all the way to the top.
Step 16
Seal the jars with sterile lids and leave them at room temperature until completely cooled. Then move the jars to a cellar, the refrigerator, or another cool place. The preserve is ready and can be stored all winter.
