Grandma-Style Deep-Fried Enriched-Dough Cookies

Preparation
Step 1
To make these delicious grandma-style enriched-dough cookies, prepare all the needed ingredients.

Crack 5 large eggs into a deep bowl, then add 1/4 tsp salt.
Step 3
Whisk the eggs well.
Step 4
Add 100 g sugar (about 1/2 cup) and 1 tsp vanilla sugar.

Pour in 50 ml milk (about 3 Tbsp + 1 tsp) at room temperature.

Add 2 Tbsp vegetable oil.

Add 2 Tbsp cognac.

Mix everything well.

Finely grate the zest of 1 lemon and squeeze its juice into a small bowl.

Add the lemon zest to the main bowl, pour in the lemon juice, and mix well.

Add most of the 600 g sifted wheat flour (about 4 3/4 cups total; add gradually).

Add 1 scant tsp baking soda and mix well.

Add the remaining flour and knead until you get the right dough consistency.

Continue kneading the dough by hand in the bowl for about 7 minutes.

Gather the dough into a ball and place it in a plastic bag for 30 minutes.

After that, transfer the dough to a lightly floured surface, gently knead and shape it, then divide into 2 equal parts.

Press each part into a thick flat cake.

Roll each one into a 3-4 mm thick rectangle.

Cut each rectangle into strips about 7 cm wide.

Slightly roll each strip and cut it into 2 pieces.

Make small knife cuts along the edges of each strip.

Fold each strip tightly in half.

Roll the folded strips into rings and firmly pinch the ends together.

Pour enough vegetable oil into a pot for deep-frying and heat it well, then carefully add the formed rings.

Using a wooden stick to turn them, fry the rings quickly on both sides until golden.

Place the cookies on paper towels to remove excess oil and dust with powdered sugar to taste.
