Gooseberry Compote for Winter in a 3-Liter Jar

A tasty and healthy drink for any occasion! Gooseberry compote for winter in a 3-liter jar is the simplest way to preserve a flavorful drink without sterilization. You can use berries of any variety. Red gooseberries give a brighter, more intense color.

Preparation
Step 1
You'll need a minimal set of ingredients. Gooseberries of any variety will work. For one 3-liter jar, use between 300 and 500 grams (10.5–17.5 oz) of berries. You’ll need 2.5-3 liters (10.5-12.5 cups) of water.
Step 2
Start by making the syrup. Add sugar and water to a large pot. I usually prepare several 3-liter jars at once. This time I had enough gooseberries for two jars, so I used 5-6 liters (21-25 cups) of water and 600 grams (about 3 cups) of sugar. Bring to a boil over high heat and simmer for 2-3 minutes.
Step 3
Meanwhile, prepare the berries and jars. Remove leaves and debris from the gooseberries; stems can be left on. Rinse the berries in cold water.
Step 4
Thoroughly wash jars with baking soda and sterilize them in a water bath or oven. Pour about 1 liter (4 cups) of sweet syrup into each jar.
Step 5
Add the gooseberries.
Step 6
Pour the remaining boiling syrup up to the very brim.
Step 7
Cover with pre-boiled lids and seal with a canning key. Turn the jars upside down and check for leaks. Wrap the inverted jars in a warm blanket and leave them until completely cooled. A 3-liter jar usually takes about 24 hours to cool.
Step 8
The gooseberry compote is ready! Store it in a cool, dark place until winter or longer.
