Gnocchi with green peas

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Heat the oil in a large frying pan over medium-high heat. Add the shallot and a pinch of salt, then fry gently for 5-6 minutes, until softened but not browned.
Step 2
Pour in the white wine and let it bubble for a minute or two to cook off the alcohol. Stir in the heavy cream and lemon zest, then reduce the heat to low to keep the sauce warm while you prepare the gnocchi.
Step 3
Cook the gnocchi in a saucepan of boiling salted water according to the packet instructions. The gnocchi are ready when they rise to the surface, which should take about 4 minutes.
Step 4
Drain the gnocchi, reserving a little of the cooking water. Add the gnocchi to the pan with the cream sauce, along with the frozen peas. Increase the heat to medium and stir everything together so the peas cook gently in the sauce while it coats the gnocchi evenly. If the sauce becomes too thick, stir in a splash of the reserved cooking water to loosen it.
Step 5
Remove the pan from the heat and season to taste with black pepper and a squeeze of lemon juice.
Step 6
Serve immediately in warm bowls, finishing with a generous sprinkle of freshly grated Parmesan.
