Gluten-Free Rice Flour Dumplings

Healthy, diet-friendly, and low-calorie dumplings perfect for dinner! Rice flour dumplings hardly differ in taste from traditional wheat ones, but have much fewer calories. The filling uses turkey or chicken, reducing calories further.

Preparation
Step 1
Instead of turkey, you can also use chicken fillet. It’s better if the meat is chilled, not frozen - this makes the filling juicier.
Step 2
First, prepare the dough. How to make dough? Take a bowl and sift rice and wheat flour into it - this loosens the heavier rice flour, enriches it with oxygen, and breaks lumps. Add salt and mix.
Step 3
Make a well in the center and crack in an egg. Start adding water while stirring the flour with a fork. You may need slightly more or less water. Pour most of it and begin kneading the dough by hand.

Check the dough’s consistency - if still dry, add water. If it forms a ball easily, it’s ready. Rice dough differs from wheat - it’s less elastic because rice lacks gluten. So it’s better if the dough is softer than traditional wheat dough.
Step 5
Prepare the filling. How? Finely grind the meat into mince using a grinder or food processor.
Step 6
Peel and grate the onion finely - this makes the filling more tender. Add salt and pepper to taste.
Step 7
Mix the filling well. You can add a little water for juiciness.
Step 8
Roll the dough into a thin sheet on a floured surface; flour the rolling pin well since the dough is soft and may stick. Cut circles using a suitable cutter - I use a glass.
Step 9
Place a spoonful of meat filling in the center of each circle. Fold into a half-moon and carefully pinch edges. Shape each dumpling into a ring and seal the corners. Rice dough tears easily but also sticks back easily. If holes appear, gently patch with fingers. Make dumplings from all the dough; I got about 40 pieces.
Step 10
Boil the dumplings in salted water for about 8 minutes after boiling - they should float. Remove with a slotted spoon onto a plate. Serve with any sauce - sour cream, mayonnaise, ketchup. Enjoy!
