Step 1
How do you make gluten-free pizza? Measure the ingredients for the dough. You can use any gluten-free flour (amaranth, soy, chickpea, buckwheat). Warm the water slightly.
Step 2
Dissolve the yeast and sugar in 50 ml warm water. Let stand for 10-15 minutes so the yeast activates and a foamy cap forms on top.
Step 3
Mix rice flour and corn flour and sift through a sieve.
Step 4
Use a convenient bowl for mixing. Dissolve salt in the remaining water, pour in the yeast mixture, and stir.
Step 5
Add olive oil and mix.

Add the sifted flour mixture. Stir with a spoon first, then knead by hand.
Step 7
The dough will be very tender and slightly sticky. Cover with plastic wrap and leave at room temperature for 30 minutes.

For the topping, use any gluten-free ingredients. I used homemade tomato sauce. Mozzarella can be replaced with Parmesan, cheddar, or feta. Any neutral vegetable oil can replace olive oil. Choose tomatoes that are juicy but firm so they hold their shape when sliced.

Boil chicken breast in salted boiling water until cooked through, then let cool.
Step 10
During proofing the dough won’t rise much; it will only feel a bit fluffier. Grease parchment with oil and shape the dough into a round base about 0.5 cm (about 0.2 in) thick. This dough isn’t stretchy, so it’s easier to shape it with your hands rather than a rolling pin. Brush the surface with olive oil.

Spread tomato sauce and sprinkle with basil. Use any seasonings you like.
Step 12
Shred the cooked chicken into fibers or cut into small pieces. Spread evenly over the dough.

Wash and pat dry the vegetables. Slice the tomatoes into rounds and lay them over the chicken.

Remove seeds from the pepper and chop as you like. Add the pepper on top of the tomatoes.

Grate the mozzarella on a coarse grater or slice into thin pieces.

Sprinkle the pizza with cheese.

Bake in a preheated oven at 180°C / 356°F for 15-20 minutes, until golden.
