Glazed Orange Loaf Cake
This beautiful orange loaf cake is wonderfully moist yet tender. Orange purée and zest give it a bright color, fresh aroma and rich citrus flavor, while the smooth sugar glaze provides the perfect finishing touch.

Preparation
Step 1
Bring all the ingredients to room temperature.
Step 2
Finely grate only the bright orange part of the peel. Avoid the white pith, as it can taste bitter.
Step 3
Squeeze the juice from one half of the orange and reserve it for the glaze. Peel the other half, cut it into pieces and blend with an immersion blender until smooth.
Step 4
Measure out 1 oz of the orange purée for the cake. The remaining purée will not be needed.
Step 5
Beat the softened butter with the sugar until pale and fluffy.
Step 6
Add the eggs one at a time, beating thoroughly for 3–4 minutes after each addition.
Step 7
Sift in the flour together with the baking powder, salt and vanilla. Mix thoroughly.
Step 8
Add the orange zest and the measured orange purée. Mix until evenly combined. The batter should be smooth, pale orange and very fragrant.
Step 9
Line the bottom and sides of a loaf pan with parchment paper. Transfer the batter to the prepared pan.
Step 10
Bake in an oven preheated to 340–350°F for 40–50 minutes. Check for doneness by inserting a wooden skewer into the center. It should come out clean.
Step 11
Leave the cake to cool slightly, then carefully remove it from the pan.
Step 12
To make the glaze, combine the reserved orange juice with confectioners’ sugar. Mix thoroughly until smooth and thick but pourable.

Using a teaspoon, carefully spread or drizzle the glaze over the completely cooled cake.

Leave the glaze to set. As it dries, it will develop an attractive matte finish.
Step 15
Once the glaze has set, slice the tender, moist and fragrant orange cake and serve it with tea or coffee.

The finished cake should have a delicate crumb and a rich, buttery texture. It remains moist and soft while having an intense orange aroma.
