Glass Noodles with Beef and Vegetables

A colorful and beautiful salad for any occasion! Glass noodles with beef and vegetables are both a salad and a full Asian-style meal. Tastes great warm or cold - perfect for festive tables!

Step 1
You can use any meat - pork, chicken, or beef. For this version, we’ll use beef. Choose lean meat without veins or films. Use any vegetables you like; for color, I used bell peppers of different shades.

Rinse the beef and pat dry with paper towels. Cut into thin strips. Remove any connective tissue. Pour soy sauce over the meat and let marinate for 30-40 minutes at room temperature.
Step 3
Meanwhile, prepare the vegetables. Peel the onion, carrot, and garlic. Cut bell peppers in half and remove the seeds. Rinse and pat all vegetables dry. If the cucumber has a bitter peel, remove it.
Step 4
Finely chop the garlic or press it through a garlic press. Slice the onion into thin half-rings, cut bell peppers into thin strips, cucumber into matchsticks, and grate the carrot on a Korean-style grater.
Step 5
Heat some vegetable oil (about 1 tbsp) in a skillet. Add the beef and fry, stirring, until the liquid evaporates. Then reduce heat and cook until tender, stirring occasionally so it doesn’t burn. You may cover the pan if needed. Remove the cooked beef to a plate.
Step 6
In the same skillet, add the onion and garlic. If necessary, add a bit more oil. Fry over high heat for a few seconds.
Step 7
Add the grated carrot and continue stirring and frying until it reaches the desired tenderness.
Step 8
In a separate pan, heat 1 tbsp of oil and lightly fry the bell pepper for 30 seconds to 1-2 minutes.
Step 9
Cook the glass noodles according to the package directions (usually 5 minutes or less). Drain in a colander and let cool.
Step 10
Place the noodles in a large bowl. Add the beef, onions, and carrots.
Step 11
Add the bell peppers and cucumbers.
Step 12
Mix everything thoroughly and taste for salt. Add salt or soy sauce to taste.

Sprinkle with sesame seeds and garnish with fresh herbs - green onions and parsley go especially well with this dish.
