Gingerbread flapjacks
Simple homemade spiced flapjacks with golden syrup, ginger and cinnamon - soft, chewy, and perfect for snacking.

Step 1
Preheat the oven to 200C.
Step 2
Grease a square baking tin with butter, making sure to line both the base and sides with baking paper to prevent sticking.
Step 3
Place the oats into a large mixing bowl, add the brown sugar, and stir thoroughly, breaking up any lumps as you go.
Step 4
Add the butter, golden syrup, ground ginger, and ground cinnamon to a saucepan and warm gently until the butter melts. Stir the mixture until fully combined, then pour it over the oats - taking care, as it will be hot. Mix well until the mixture becomes sticky and evenly coated.
Step 5
Transfer the flapjack mixture into the prepared tin and press it firmly into an even layer using a spatula. Bake for 25 minutes.
Step 6
Remove from the oven and allow the flapjack to cool completely in the tin before slicing. Cut into 16 squares or triangles and serve.
