Ginger Tea with Honey and Lemon

Preparation
Step 1
Prepare the ingredients. Use clean filtered or bottled water. Fresh ginger is preferable, as it gives the tea a stronger aroma. Adjust the amount of lemon according to your taste and choose good-quality natural honey.
Step 2
Cut a small piece from the ginger root, approximately half the length of your thumb. Peel away the outer layer and finely grate the pale flesh into a pulp. Use approximately 1 tablespoon of grated ginger per 4¼ cups of water; for a smaller teapot, reduce the amount accordingly.
Step 3
Choose a glass or ceramic teapot or another heatproof container. Add the grated ginger, pour over the boiling water, cover the container with a towel and leave the tea to steep for 5–10 minutes.
Step 4
While the ginger is steeping, thoroughly rinse the lemon under warm water and scrub the peel with a clean brush. Cut the lemon into round slices.
Step 5
Add as many lemon slices as you like to the infused tea. Add the honey and stir. To preserve its delicate flavor, you can let the tea cool slightly before adding the lemon and honey.
Step 6
Serve the tea hot or chilled. If desired, add fresh mint, lemon balm, thyme, sea buckthorn berries or currants.
