Georgian Beet and Walnut Phali

Step 1
How do you make Georgian-style beet phali with walnuts? Prepare the necessary ingredients. Use good-quality walnuts without bitterness, because the flavor of the nuts will determine the taste of the finished dish. Choose juicy, bright, sweet beets - mine were exactly like that. Rinse the walnuts, dry them on paper towels, and you can lightly toast them in a frying pan for a more aromatic and flavorful result. Place the walnuts into a blender bowl. You can also use a meat grinder, but a blender is more convenient for me.

Rinse the herbs, dry them, chop them, and add them to the walnuts. Blend and transfer the resulting mixture to a bowl.
Step 3
Cook the beets until done. I baked them in the oven for 2 hours at 180°C (350°F), but my beets were large; medium beets may need about 1 1/2 hours. Cool the beets, peel them, and cut them into pieces so they are easier to blend.
Step 4
Peel the garlic, rinse it, add it to the blender bowl with the beets, and blend everything together.
Step 5
Add the blended beets and garlic to the bowl with the walnuts and herbs, then add the wine vinegar, salt, and spices. Mix well, shape the mixture into balls, flatten them slightly on top, and decorate with walnuts and herbs or with pomegranate seeds, according to your taste. Enjoy your meal!
