Garlic bread with cheese
Crispy, aromatic homemade garlic baguettes baked to perfection with roasted garlic pressed into the dough, finished under a hot grill with melted mozzarella.

Preparation
Step 1
To prepare the baguettes, add the flour, salt, yeast, olive oil, and most of the water to a food mixer fitted with a dough hook, ensuring the salt and yeast do not touch until mixing begins. Mix on a slow speed, gradually incorporating the remaining water to form a smooth dough, which should take around five minutes.
Step 2
Transfer the dough to an oiled bowl, cover, and leave to prove for two hours. Once risen, turn the dough out onto an oiled surface, dust your hands with flour, divide it into two portions, knock each portion back, stretch and fold, then roll into baguette shapes.
Step 3
For the garlic mixture, preheat the oven to 200C. Break apart the head of garlic, leaving the skins on, and place the cloves in a roasting tin with a splash of olive oil and a pinch of salt and sugar. Roast for 20 minutes, or until caramelised. Remove and, once cool enough, squeeze the soft roasted garlic from the skins.
Step 4
As you continue shaping the dough into baguettes, press the roasted garlic into the dough to your taste. Place the baguettes onto a baguette tray or large baking tray, cover, and allow them to prove again until doubled in size.
Step 5
Heat a roasting dish at the bottom of the oven and pour in water to create steam for a crisp crust. Preheat the oven to 220C. Before baking, slash the tops of the loaves three times.
Step 6
Bake for 30 minutes, then reduce the temperature to 200C and bake for a further 10 minutes until golden-brown with a slight sheen. Remove and allow to cool completely.
Step 7
When cooled, preheat the grill to hot. Slice the baguettes, top with mozzarella, and grill until melted and bubbling before serving.
