Frozen Raspberries for Winter

Preparation
Step 1
We will freeze whole raspberries. Choose the freshest, firmest, and cleanest berries without stems. Remove any twigs or leaves. Ideally, pick raspberries straight from the bush. Raspberries are delicate and don’t store well. Do not wash them before freezing, as they will absorb water and fall apart after thawing.
Step 2
Take a tray and line it with a paper towel. Spread the selected raspberries on it. If any juice appears, the paper will absorb it immediately. Otherwise, the juice will freeze and make berries stick to the tray, damaging them when removed. Arrange the raspberries freely so they don’t touch each other or stack. Place the tray in the freezer for several hours or overnight.
Step 3
Because the raspberries were initially firm and dry, they won’t stick together when frozen and will retain their shape. Once frozen, they will move easily on the tray and can now be packed.
Step 4
I store frozen berries in plastic containers, but you can use bags too. However, bags may crush the berries. Pack the frozen raspberries into your prepared containers.
Step 5
Close with lids and return to the freezer for storage. Stored this way, the berries keep well for a long time. Use them for compotes, pies, porridge, or desserts. Read about proper thawing at the end of the article. Enjoy your winter treat!
