Fried Yeast Hand Pies in a Skillet

These hand pies can be made with absolutely any filling, the main thing is that it must already be fully cooked. I made them with potato filling. For this, I boiled the potatoes in advance, mashed them, added onion fried in butter, salt, ground black pepper, and mixed everything together.
Step 3
Warm the milk slightly, but not too much. It should be warm but not scalding, otherwise the yeast will not activate and will die. Pour the warm milk into a bowl, add the yeast and sugar. Mix everything until smooth.

Sift 3 tablespoons of flour into the bowl with the milk and yeast and mix again until smooth.
Step 5
Cover the bowl with a clean cloth and leave it in a warm place for about 15 minutes. During this time, the yeast should begin to work and form a thick foam. If this does not happen, the yeast is not suitable for use and will need to be replaced.

Crack the egg into a separate bowl and mix it with a fork or whisk until smooth. Pour half of the egg into the activated yeast mixture, add salt, and stir.

Now sift 1 cup of flour into the bowl with the yeast mixture and knead the dough. It will be sticky, and that is how it should be. You may need a little less or a little more flour, so judge by the consistency of the dough.

Pour the vegetable oil into the dough and continue kneading.

Now gradually add the remaining flour and knead a soft dough. You may need a little more or a little less flour than indicated. The yeast dough for frying hand pies in a skillet is ready. Leave it on the table for about 5 minutes.

Divide the dough into 12 equal parts and shape them into balls.

Take one ball and roll it out with a rolling pin into a thin round.

Turn the hand pie seam side down and press it lightly on top.

Heat vegetable oil in a skillet. The oil level should be about 1 cm, about 3/8 inch. Place the first batch of hand pies into the skillet seam side down, lower the heat, and fry for 3–5 minutes on each side until golden brown.

Remove the finished hand pies from the skillet and place them on a plate lined with a paper towel so it can absorb the excess fat. Fry all the hand pies this way.

Serve the fried hand pies with milk, tea, or coffee.
