Fried Yeast Hand Pies
Golden, aromatic and especially delicious straight from the pan! These fried hand pies are made with a soft, easy-to-handle yeast dough. Fill them with jam, vegetables, meat or any other sweet or savory filling.

Step 1
Prepare the ingredients for the yeast dough. The amount of flour is approximate, so you may need slightly more or less depending on the consistency. Use fast-acting dry yeast and flavorless vegetable oil. You can replace the water with milk or a mixture of milk and water.

Pour the warm water into a deep bowl. It should be pleasantly warm rather than hot, as excessive heat can deactivate the yeast. Add the salt and sugar and stir until dissolved.

Pour in the vegetable oil and mix.
Step 4
Combine the yeast with 1 cup of the flour. Sift this mixture into the liquid ingredients, then sift in another cup of flour. Begin mixing the dough with a fork, then continue with your hands.
Step 5
Knead the dough, gradually adding more flour only as needed. It should become smooth and nearly stop sticking to your hands while remaining soft. Avoid adding too much flour, as this can make the fried pies dense.
Step 6
Cover the bowl of dough with a towel and leave it in a warm place for approximately 1 hour, or until doubled in volume.
Step 7
Transfer the risen dough to a work surface and divide it into 12 equal portions. Shape each piece into a ball, lightly flouring the work surface only if necessary.

Roll each dough ball into a thin round. Place your preferred filling in the center; jam or fruit preserves work well, and a little starch can be mixed into a runny filling to help prevent leaking. Fold the dough over the filling and pinch the edges together firmly. Shape all the remaining pies in the same way.
Step 9
Choose a heavy-bottomed frying pan and pour in enough vegetable oil to reach halfway up the sides of the pies. Heat the oil over high heat. Test it with a wooden skewer; if small bubbles form around it, the oil is ready. Carefully add the pies without overcrowding the pan.
Step 10
Reduce the heat to medium and fry the pies until golden on one side, then turn them over and cook until evenly browned on the other side.
Step 11
Transfer the cooked pies to a plate lined with paper towels to absorb excess oil. Continue frying the remaining pies in batches.

Serve the fried yeast hand pies warm.
