Fried Potato-Filled Buns

Golden, soft, made from simple ingredients, and very tasty! Fried Potato-Filled Pirozhki use a dough that doesn’t need rising. Mix and fry immediately, quick, simple, and versatile. You can change the filling to taste, including sweet ones.

Preparation
Step 1
Peel the potatoes and rinse them under running water.
Step 2
Put the peeled potatoes in water, bring to a boil, and cook until tender, about 25-30 minutes. Lightly salt. Drain the hot water and mash the potatoes. Add a little cream. Let the potato filling cool.
Step 3
For the dough, combine warm water with sugar and yeast. Stir to dissolve.
Step 4
Add salt and vegetable oil. Mix in half of the flour.
Step 5
Pour in boiling water and stir into the dough with a wooden spatula. Gradually add the remaining flour and knead. Adjust flour as needed for consistency.
Step 6
The dough should be soft and tender, not sticky. No rising time is needed. You can shape buns immediately.
Step 7
For the filling, peel and finely chop the onion. Fry in a skillet with a little vegetable oil until golden.
Step 8
Mix the fried onion into the mashed potatoes. Optionally add chopped herbs. Mix well.
Step 9
Divide the dough into small pieces. Roll each piece into a small flat circle, place potato filling in the center, and pinch edges to form a bun.
Step 10
Fry the buns in vegetable oil over low heat on all sides.
Step 11
Turn them on the sides to brown evenly.
Step 12
Remove the fried buns onto paper towels to drain excess oil. Let cool slightly and serve. Enjoy!
