Fried Pollock with Vegetables in a Skillet

Preparation
Step 1
First, prepare all the necessary ingredients and spices for frying pollock fillet with vegetables in a skillet.
Step 2
Place 1 lb (500 g) of pollock fillet, cut into small pieces, in a bowl. Season with salt and ground black pepper to taste, then mix well.
Step 3
Heat a skillet over the stove, add 2 tbsp vegetable oil, and heat it. Slice 1 large onion into thin half-rings, grate 1 large carrot, and add them to the hot oil. Stir and sauté over high heat.

In another skillet, heat 2 tbsp vegetable oil. Coat the pollock fillet pieces in wheat flour and place them in the hot oil. Fry over medium heat until golden brown on one side.
Step 5
Flip the fish pieces and fry for another 2 minutes over medium heat. Transfer the fried pollock fillet to a plate.
Step 6
Slice 2 bell peppers into thin half-rings and add them to the skillet with onions and carrots.

Dice 2 medium tomatoes and add them to the skillet. Stir and sauté the vegetables over high heat. Season with salt and ground black pepper to taste, then simmer for another 4 minutes.

Transfer half of the stewed vegetables to a deep dish, leaving the rest in the skillet. Spread them evenly.
Step 9
Place the fried pollock fillet pieces evenly over the vegetables in the skillet.

Add the reserved stewed vegetables from the dish on top of the fish, spreading them evenly.

Cover the skillet with a lid and cook on low heat for 10 minutes, until fully done.

Serve the cooked pollock fillet with vegetables on plates with a garnish of your choice.
