Fried Onion and Carrot Base for Soup

Preparation
Step 1
Prepare the necessary ingredients. The ratio of onions to carrots can be adjusted to your taste, as well as the total quantity. If desired, you can omit the pepper.

Peel the carrots and remove the outer skin from the onions. Rinse the vegetables under running water to remove any dirt.
Step 3
Finely chop the onion.
Step 4
Grate the carrot using a coarse grater. You can also use a fine grater, but in this case, the carrot may dissolve too much in the soup.
Step 5
Heat a frying pan until hot. Pour vegetable oil into it and add a small piece of butter. The butter will give the fried mixture a pleasant creamy aroma.

Add the chopped onion to the hot oil.
Step 7
Add the grated carrot to the onion and mix everything well. Fry the vegetables over low heat for 5–7 minutes, stirring occasionally to prevent burning.
Step 8
As the vegetables cook, they will reduce in size. Add ground pepper. You can also add salt, but keep in mind that the soup may already contain salt.
Step 9
Once the vegetables are soft, the base is ready!

Use this fried base in soups. You can also store a portion in the refrigerator for later use. Enjoy your cooking!
