Fried Mushrooms with Onions and Sour Cream

You can use frozen or dried mushrooms instead of fresh (you’ll need 5-6 times less if using dried). Frozen mushrooms can be thawed using any method (e.g. microwave defrost setting - follow your device's instructions) and drained of excess liquid.
Preparation
Step 1
You can use any mushrooms - wild or cultivated. I used champignons. Frozen mushrooms also work. Prep depends on type: rinse cultivated mushrooms, but boil forest mushrooms before frying. Any fat content sour cream will work, just make sure it's natural and tasty.
Step 2
Peel, rinse, and dry the onion. Slice into quarter-rings. To reduce eye irritation while cutting, rinse both the onion and knife in cold water. Rub a lemon slice on the cutting board to prevent onion odor from lingering.
Step 3
Gently rinse the mushrooms, being careful not to soak them, as they absorb water and lose flavor. Pat dry with paper towels. Slice them into large chunks or quarters - they will shrink significantly while frying.
Step 4
Heat a skillet over medium heat and add vegetable oil. Add the onion and sauté for 3-4 minutes, stirring, until translucent.
Step 5
Add mushrooms to the skillet. Season with salt and pepper. Mix and cover with a lid. Reduce the heat.
Step 6
Cook the mushrooms for about 15 minutes, stirring occasionally. They will release water, which needs to evaporate.
Step 7
When most of the liquid has evaporated, add the sour cream. Stir and simmer under the lid on low heat for a few more minutes. Then turn off the heat.
Step 8
Serve the fried mushrooms hot. Enjoy your meal!
