Place 1 ½ lbs (700 g) of well-washed chicken liver (with connective tissue removed) into a large bowl. Add salt and ground black pepper to taste, then mix well.

Heat a skillet over medium heat. Pour in about 3 ½ Tbsp (50 ml) vegetable oil. On a plate, add ¼ cup (50 g) all-purpose flour and coat the liver pieces in it.

Place the floured chicken liver into the hot oil and fry on one side until golden brown, about 2 minutes over medium heat.

In another skillet, heat 2 Tbsp (30 ml) vegetable oil over medium heat. Add 2 large onions, cut into quarter-rings, and sauté until golden.

Flip the chicken liver pieces and fry for another 2 minutes until golden brown on the other side. Transfer the fried liver to a deep plate.

Season the onions in the skillet with salt and black pepper to taste, stirring well.
