Fried Butter Mushrooms for Winter in Jars
Tasty, easy, and quick - an aromatic preserve for any occasion! Fried butter mushrooms for winter in jars will save you more than once in the cold season. Just open a jar, heat the contents - and you have a ready dish on the table! These mushrooms are delicious on their own and perfect for side dishes, snacks, and salads.

Preparation
Step 1
I use butter mushrooms, but any kind will do - birch boletes, aspen mushrooms, or honey mushrooms. Be mindful of where you pick them - avoid roadside areas and go deeper into the forest. Sort the mushrooms, remove debris, and discard any wormy ones.
Step 2
Wash the butter mushrooms and clean if needed. Some remove the slimy skin from the caps, but I don’t. Cut large ones into 2-3 pieces, leave small ones whole.
Step 3
Pour cold water over the sliced mushrooms.
Step 4
Add salt to the water and let the mushrooms sit for about 15 minutes. This helps any worms crawl out if you missed some.
Step 5
Drain the water, refill with fresh water, and bring to a boil over low heat. Boil for about 15 minutes, skimming off the foam as it forms.

Then drain the mushrooms through a sieve.

Rinse well under cold running water.
Step 8
Heat refined vegetable oil in a skillet - any type works, from sunflower to olive, but it must be refined. Only refined oil is suitable for frying. Add the mushrooms to the pan.
Step 9
Fry the mushrooms to your desired doneness. For a more golden, roasted flavor, cook for 20-25 minutes; for medium doneness, 10-15 minutes is enough. Add salt at the end if needed. While frying, prepare the jars.
Step 10
Choose jars of 10-17 oz (300-500 ml). Wash them well with baking soda, then sterilize them by your preferred method. I microwave clean jars with water for 10 minutes, then pour the water out. Boil the lids for 5 minutes.
Step 11
Pack the mushrooms tightly into the jars and seal them with lids. Store in the refrigerator or cellar.
