Fried Brynza on a Skillet

For breakfast, a quick snack, or to add to a salad! Bulgarian fried brynza is a light yet hearty snack for the whole family and a great appetizer with beer. Golden hot cheese slices can also form the base of a fresh vegetable salad. A perfect quick treat.

Preparation
Step 1
Choose a firm cheese that keeps its shape when frying. Besides brynza, Adyghe, halloumi, tofu, or suluguni work well. Use a suitable frying oil; I used olive oil.
Step 2
Remove the brynza from brine and pat dry with paper towels. Let the cheese rest for 5-7 minutes to release excess moisture, or it will steam instead of fry.
Step 3
Cut the cheese into rectangular slices about 1 cm (⅜ in) thick. I made 4 slices.
Step 4
Brush the slices with oil on all sides. If using a regular skillet, optionally coat with cornstarch, potato starch, or flour, shaking off excess to prevent burning. I used a grill skillet, so no coating was needed.
Step 5
Heat the skillet over medium-high heat. Place the slices and fry until grill marks appear. Flip and fry until golden on the other side. A nonstick pan works best to prevent sticking.
Step 6
Transfer the hot fried cheese to a plate and serve immediately. Serve sweet with honey and nuts or savory with fresh basil and cherry tomatoes. Enjoy!
