Advice
Be prepared to adjust the amount of flour as needed. Focus not on the exact measurement but on achieving the desired batter consistency.
Preparation
Step 1
First, prepare all the necessary ingredients. Use refined, odorless vegetable oil. You can add additional spices to taste.
Step 2
In a small bowl, mix flour, sugar, baking powder, cinnamon, nutmeg, and salt. Stir well.
Step 3
In another bowl, whisk the egg until smooth.
Step 4
Add kefir to the egg and mix.
Step 5
Gradually add the dry ingredients and mix again. The batter will be very thick, which is normal.
Step 6
While stirring, gradually pour in the milk. Whisk until the batter is smooth.
Step 7
The batter should be thick. Let it rest for 2–3 minutes to thicken further as the gluten develops. It should be sticky enough to coat the apples without dripping off like water. If it's too runny, add more flour.
Step 8
Wash the apples thoroughly. Use a corer to remove the seeds, then slice them into 1 cm thick rings. Choose juicy, aromatic apples like Granny Smith or similar varieties.
Step 9
Dip each apple ring into the batter, coating all sides evenly.
Step 10
Heat vegetable oil in a frying pan or saucepan over medium heat (about 350°F / 175°C). The amount of oil depends on the pan size, but the apple rings should float freely in the oil. Carefully place the battered apples into the hot oil and fry on both sides until golden brown.
Step 11
Transfer the fried apples to a paper towel to absorb excess oil.
Step 12
Sprinkle with powdered sugar and serve immediately. Enjoy!
